12 Days of Easy Christmas Cookies #2: Easy Mint Chocolate Chip Cookies

Image: The Cookie Elf

Mint Chocolate Chip Cookies are a colorful variation on the classic chocolate chip cookie recipe with a nod to those who like the combination of mint and chocolate.

With just 7 ingredients, it’s among the most easy Christmas cookie recipes to make, given that its base is a sugar cookie mix dressed up. Two kinds of chocolate chips may seem like a lot for a chocolate chip cookie recipe, but no one says this version should taste simple. Wait until you bite into the result.

Green tints make this cookie festive and fun to add to a Christmas cookie tray.

Prep time: 15 minutes
Bake time: 8-10 minutes
Makes about 2-3 dozen bars, depending on how you cut them

Christmas Cookie Baking Tip : Dress Up Drop Cookies With Drizzle

Image: Our Best Bites

Christmas drop cookies, like Mint Chocolate Chip Cookies, are colorful as is. But you can make them even more festive when you top them with a bit of extra chocolate.

Melt 1-2 ounces of semi-sweet chocolate in the microwave. Use a spoon to drizzle the melted chocolate on tops of cooled cookies. Let them set before serving.

Use the same tip with other drop cookies – even those that do not contain semi-sweet chocolate – by melting vanilla or white chocolate to drizzle on cookie surfaces.
