Mint Chocolate Chip Cookies:
Just 7 Ingredients

These Mint Chocolate Chip Cookies are a variation on the classic chocolate chip cookie recipe with a nod to those who like the combination of mint and chocolate. The flavor brings to mind the iconic Girl Scout Thin Mint Cookies.

Yet the recipe is simple, given that its base is a sugar cookie mix – dressed up. Two kinds of chocolate chips may seem like a lot for a  chocolate chip cookie recipe, but no one says this version should taste simple. Wait until you bite into the result.

Green tints make this cookie festive and fun to add to a Christmas cookie tray.

Also mint flavoring is a refreshing reminder of summer making this cookie a fun option to bake during warmer months.

Prep time: 15 minutes

Bake time: 8-10 minutes

Makes about 2-3 dozen cookies


1 pouch (17-20 ounces) sugar cookie mix, such as Betty Crocker™ Sugar Cookie Mix

½ cup (1 stick) butter or margarine, room temperature

¼ to ½ teaspoon mint extract

6 to 8 drops green food coloring

1 egg

1 cup crème de menthe baking chips

1 cup semi-sweet chocolate chips or chocolate chunks

Directions for Mint Chocolate Chip Cookies

  1. Preheat oven to 350º F. Line baking sheets with parchment paper.

  2. In a medium bowl, using an electric mixer on medium speed, mix together cookie mix, butter, mint extract, and egg until a soft dough forms, scraping the bowl continually. Gradually add in food coloring drops until the dough is the color you want.

  3. Use a large spoon to stir in crème de menthe baking chips and chocolate chips.

  4. Use a small ice cream scoop or cookie scoop to drop rounded teaspoonfuls onto the prepared baking trays, 2 inches apart.

  5. Bake 8-10 minutes until cookies are lightly brown around the edges.

  6. Remove cookie sheets from the oven. Allow cookies to sit for 5 minutes before using a spatula to transfer them to a wire rack. Cool completely.

  7. Store cookies in an airtight container.

Special Baking Tips for Mint Chocolate Chip Cookies

  • You can make sure cookies bake evenly when you measure and drop cookie dough onto baking sheets into the same shape and size.
  • You can melt 1-2 ounces of semi-sweet chocolate to drizzle on tops of cooled cookies to make them even more festive.
