These Mint Chocolate Chip Cookies are a variation on the
classic chocolate chip cookie recipe with a nod to those who like the
combination of mint and chocolate. The flavor brings to mind the iconic Girl
Scout Thin Mint Cookies.
Yet the recipe is simple, given that its base is a sugar
cookie mix – dressed up. Two kinds of chocolate chips may seem like a lot for a chocolate chip cookie recipe, but no one says this version should taste
simple. Wait until you bite into the result.

Makes about 2-3 dozen cookies
1 pouch (17-20 ounces) sugar cookie mix, such as Betty
Crocker™ Sugar Cookie Mix
½ cup (1 stick) butter or margarine, room temperature
¼ to ½ teaspoon mint extract
6 to 8 drops green food coloring
1 cup crème de menthe baking chips
1 cup semi-sweet chocolate chips or chocolate chunks
Directions for Mint Chocolate Chip Cookies
- Preheat oven to 350º F. Line baking sheets with parchment
- In a medium bowl, using an electric mixer on medium speed,
mix together cookie mix, butter, mint extract, and egg until a soft dough
forms, scraping the bowl continually. Gradually add in food coloring drops
until the dough is the color you want.
- Use a large spoon to stir in crème de menthe baking chips
and chocolate chips.
- Use a small ice cream scoop or cookie scoop to drop rounded
teaspoonfuls onto the prepared baking trays, 2 inches apart.
- Bake 8-10 minutes until cookies are lightly brown around the

5 minutes before using a spatula to transfer them to a wire rack. Cool
