Red Velvet Sugar Cookies are a combination of two favorites:
an easy sugar cookie recipe and red velvet cake. And red velvet is in reality a
variation of chocolate but with a unique deep red or red-brown color.
This is a gorgeous cookie for holidays, Valentine’s Day, and
parties. And here’s a little secret: it’s is incredibly easy and quick to make!
Just 4 ingredients (one of them is a cake mix) allow you to mix the cookie
dough fast. And you can swish together the glaze while the cookies cool.
Prep time: 10 minutes
Bake time: 8-10 minutes
Makes about 3 – 3 ½ dozen cookies
Ingredients

1 box (16 ounces) red velvet cake mix
2 eggs
1/3 cup vegetable oil
White decorator sugar or granulated sugar
Glaze
1 cup powdered sugar
1-3 tablespoons milk or water
Directions for Red Velvet Sugar Cookies
- Preheat oven to 350º F. Line baking sheets with parchment
paper or silicone baking mats.
- Place cake mix, vegetable oil, and eggs in a mixing bowl.
Using an electric mixer on low speed, combine the ingredients until all the dry
mix has been absorbed, scraping the bowl regularly. 
- Place the decorator sugar (or granulated sugar) in a shallow
dish or on a plate.
- Form the dough into round, scant 1-inch balls in a
consistent size, using a tiny scoop, small kitchen teaspoon, or a measuring
teaspoon. Roll each ball in decorator sugar. Place cookies on the prepared baking
sheets 2 inches apart. 
- Bake cookies for 8-10 minutes, one baking sheet at a time,
until cookies are set. Cookies will puff up slightly and surfaces will appear
crinkled. Do not over bake.
- Remove baking sheets from the oven. Allow cookies to sit for
2-3 minutes before using a spatula to transfer them to a wire rack. Cool
completely to allow cookies to set, about 30 minutes.
- While cookies cool, make the glaze. Use a spoon to combine
together powdered sugar, and milk or water. Add additional milk or water 1
teaspoon at a time to get the right consistency. Drizzle glaze over cooled
cookies.
- Store cookies in an airtight container using waxed paper or
parchment paper to separate layers.
Special Baking Tips for
Red Velvet Sugar Cookies
If formed cookie balls dry out before you roll them in sugar,
spray the surfaces with vegetable spray which will allow decorator sugar to
adhere evenly.
Save mess. Mix the glaze in the same cup you use to measure
the powdered sugar. Simply add the milk or water to the cup and swirl with a
spoon.
