Red Velvet Crinkle Cookies:
Cake Mix Cookie Recipe

Red Velvet Crinkle Cookies are a variation of the classic American red velvet cake, a rich, sweet chocolate flavored confection with a unique deep red or red-brown color. The cookies are rolled in powdered sugar for a touch of added sweetness and to add contrast to the distinctively-colored dough.

Red Velvet Crinkle Cookies

Prep time: 20-30 minutes

Bake time: 7-10 minutes

Makes about 4 dozen cookies

Ingredients

6 tablespoons butter or margarine

1 box (16 ounces) red velvet cake mix

2 eggs

1 cup powdered sugar

Directions

  1. Preheat oven to 375º F.

  2. Melt butter. Set aside to cool.

  3. Place cake mix, cooled butter, and eggs in a medium mixing bowl. Use a large spoon to combine the ingredients by hand, scraping the bowl regularly. Mix until dough is well blended and the cake mix has been absorbed.

  4. Place the powdered sugar in a shallow dish or on a plate.

  5. Form the dough into round, scant 1-inch balls in a consistent size, using a tiny scoop, small kitchen teaspoon, or a measuring teaspoon. Roll each ball in powdered sugar. Place cookies on ungreased baking sheets 2 inches apart.

  6. Bake cookies for 7-10 minutes, one baking sheet at a time, until cookies are set. Cookie surfaces will appear crinkled. Do not overbake.

  7. Remove cookie sheets from the oven. Allow cookies to sit for 1 minute before using a spatula to transfer them to a wire rack. Cool completely.

  8. Store cookies in an airtight container using waxed paper or parchment paper to separate layers.

Special Baking Tips from The Elf

The dough may be sticky but will mold easily into balls when you roll them in the powdered sugar. As they bake, the Red Velvet Crinkle Cookies will spread on the baking sheet to small rounds and the surfaces will crumple, allowing the cookies to live up to their name.
