Chocolate Macadamia Nut Cookies: Fudgy, Rich Drop Cookie

Chocolate Macadamia Nut Cookies are an unusually fudgy, rich drop cookie. The chocolate flavoring is deep and rich, made possible by two kinds of chocolate in the dough. Chocolate chunks (or chocolate chips) combine with macadamia nuts to give the cookie even more depth.

You’ll want to eat several. But be warned – they’re rich. And it’s not just the three types of chocolate ingredients that make them so. Macadamia nuts, with their buttery taste and creamy texture, add to this very special cookie flavor combination.

Chocolate Macadamia Nut Cookies

Prep time: 15-20 minutes

Bake time: 8-10 minutes

Makes about 3-4 dozen cookies

Ingredients

1 1/3 cups (2 1/3 sticks) butter or margarine, softened

1 cup granulated sugar

1 cup firmly packed brown sugar

2 eggs

2 ounces semi-sweet baking chocolate, melted and cooled

2 tablespoons milk

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

½ cup unsweetened cocoa powder

1 teaspoon baking soda

1 teaspoon salt

2 cups semi-sweet chocolate chunks or semi-sweet chocolate chips

1 cup coarsely chopped macadamia nuts

Directions

  • Preheat oven to 350º F. Set out baking sheets.

  • In a medium bowl, combine flour, cocoa powder, baking soda, and salt. Set aside.

  • In a separate bowl, with an electric mixer on low speed, cream together butter, granulated sugar, and brown sugar beating until smooth, about 2 minutes. Add eggs, one at a time, beating for 30-45 seconds after each addition, until mixture is creamy. Stir in melted chocolate, milk, and vanilla extract beating until mixture is smooth.

  • Gradually stir in dry ingredients into creamed mixture in two additions, beating just until well blended.

  • Stir in chocolate chunks and macadamia nuts by hand with a wooden spoon. Dough will be thick.

  • Drop dough in rounded teaspoonfuls onto baking sheets, about 2 inches apart. Bake for 8-10 minutes until cookies are just set. Remove cookie sheets from the oven.

  • Allow cookies to sit for 1-2 minutes before using a spatula to transfer them to a wire rack. Cool completely.

  • Store cookies in an airtight container.

A Special Baking Tip from The Elf

While the melted baking chocolate and milk added to the recipe make for a moist cookie dough, Chocolate Macadamia Nut Cookies can be chewy or crispy, depending on how long you bake them.  For a chewier cookie, bake on the low side of the suggested time. For a crisper cookie, bake 1-2 minutes longer. Do not over bake or cookies will be dry.
