Smores Bars: Easy No-Bake Cookies

Smores Bars are one of the easiest cookie recipes to make with kids – and one of their favorites. They require no baking. These cookies set quickly after preparing, too.

The cookies are a variation of the traditional campfire snack consisting of a roasted marshmallow and layer of chocolate sandwiched between two pieces of graham cracker. The cookies use graham-flavored cereal as the base, combined with melted miniature marshmallows and melted chocolate chips to hold them together.

The name “s’mores” is a contraction of “some more” (that is, tasting so good that people always want “some more”), a term which is credited to a 1927 Girl Scouts publication.

S'Mores Bars

Prep time: 10 minutes

Setting time: 20-30 minutes

Makes about 42 bars

Ingredients

8 cups graham cracker cereal, like Golden Grahams™

6 cups miniature marshmallows, divided

2 cups milk chocolate chips, divided

¼ cup light corn syrup

5 tablespoons butter or margarine

1 teaspoon vanilla extract

Directions

  • Lightly grease a 13 x 9 baking pan.

  • Spray a large mixing bowl with cooking spray. Measure cereal into the bowl and set aside.

  • In a microwave-safe bowl, mix together 5 cups of miniature marshmallows, 1 ½ cups milk chocolate chips, corn syrup, and butter. Microwave on high at 30-second intervals, stirring after each interval, until the mixture is melted and smooth when stirred, about 2-3 minutes. Remove mixture from the microwave and mix in vanilla extract. The mixture will be thick.

  • Pour melted marshmallow mixture over cereal. Toss quickly to coat cereal pieces. Add in 1 cup miniature marshmallows and ½ cup chocolate chips. Mixture will be sticky.

  • Press mixture evenly into prepared pan, using the buttered back of a wooden spoon or a piece of waxed paper so that it doesn’t stick to your fingers or adhere to the utensil.

  • Allow Smores Bars to set either at room temperature or in the refrigerator. Cut into bars. Store cookies loosely in an airtight container.

A Special Baking Tip from The Elf

As you mix together Smores Bars, add melted marshmallow mixture into the cereal in 3-5 additions, turning over the cereal onto the coating with each addition. This helps cover the cereal surfaces more quickly and evenly.

Use patience. Make sure all cereal is coated before adding extra marshmallows and chocolate chips and pressing the mixture into the pan. Otherwise, the bars will fall apart when you cut them.

You can substitute semi-sweet chocolate chips for milk chocolate chips.
