Strawberry Chocolate Chip Cookies: Easy Cake Mix Cookie Recipe

Strawberry Chocolate Chip Cookies, a variation of the standard chocolate chip cookie recipe, are easy to make.

The foundation of the recipe starts with a simple cake mix, dressed up with a few ingredients to transform the cake mix into cookies.

In less than 5 minutes, you can have these cookies in the oven.

The taste is a unique combination of strawberry and chocolate. You’ll especially like this recipe if you’re a fan of strawberry cake or strawberry milk (like Nestle Strawberry Quick).

The texture is soft and pretty … a perfect treat for Valentine’s Day, a birthday party, a bake sale, a tea party, or just for fun.

Strawberry Chocolate Chip Cookies: easy cake mix cookie recipe

Prep time: 5 minutes

Bake time: 8-12 minutes

Makes about 2 ½ - 3 dozen cookies

Ingredients

1 box (17-18 ounces) strawberry cake mix

1 teaspoon baking powder

1/3 cup vegetable oil

2 eggs

½ teaspoon vanilla extract

12 ounces (1 bag) semi-sweet chocolate chips, divided

Directions for Strawberry Chocolate Chip Cookies

  1. Preheat oven to 350º F. Line baking sheets with parchment paper or silicone baking mats. Set aside.

  2. In a large bowl, mix together the strawberry cake mix and baking powder. Set aside. In a smaller bowl, with an electric mixer on low speed, combine eggs, oil, and vanilla extract. Pour egg mixture into cake mixture. Mix to form a thick dough until all pockets of the dry mixture are absorbed. The dough will be stiff.

  3. With a large spoon, add 1 ½ cups chocolate chips to the dough. Reserve ½ cup of chips.

  4. Drop rounded spoonfuls of dough onto prepared baking sheets, 2 inches apart. Press a few extra chocolate chips (from the reserved ½ cup of chips) onto the tops of each cookie.

  5. Bake cookies for 8-12 minutes, one baking sheet at a time, until cookies are set and edges barely begin to brown.

  6. Remove cookie sheets from the oven. Allow cookies to sit for 3-5 minutes before using a spatula to transfer them to a wire rack. Cool completely.

  7. Store cookies in an airtight container.

Special Baking Tips for Strawberry Chocolate Chip Cookies

  • As you drop the dough for these cookies, allow the balls to be higher than they are wide. They will spread readily in the oven.

  • After baking, allow the cookies to set several minutes on the baking sheet before removing them to cool on a wire rack. Strawberry Chocolate Chip Cookies have a soft texture. If you remove them from the baking sheet too soon, they will not retain their round shape. But if you let them cool for 3-5 minutes they will be set and be ready to transfer to the wire rack.
