Fran's Cherry Chocolate Chip Cookies: Cake Mix Cookie Recipe

Fran’s Cherry Chocolate Chip Cookies, a variation of oatmeal chocolate chip cookies, are easy to make. Although they taste like they are made from scratch, the foundation of the recipe starts with a simple mix (true, a cookie mix rather than a cake mix), one readily available in grocery stores.

The recipe comes to The Elf from Fran Woodruff of Homewood, Alabama. Thank you, Fran!

Fran's Cherry Chocolate Chip Cookies

Prep time: 10 minutes

Bake time: 11-12 minutes

Makes about 2 ½ dozen cookies

Ingredients

1 pouch (17 ounces) oatmeal chocolate chip cookie mix

½ cup (1 stick) butter or margarine, softened

1 egg

1 cup semi-sweet chocolate chips

1 cup (5 ounces) dried cherries

Directions

  1. Preheat oven to 375º F.

  2. Chop dried cherries coarsely. (The cleaver will get sticky.) Set aside.

  3. Place cookie mix, butter, and egg in a medium mixing bowl. Using an electric mixer on low speed, beat ingredients together until combined. Dough will be stiff.

  4. Add chocolate chips and chopped cherries to the dough. Use a wooden spoon to combine the ingredients by hand, scraping the bowl regularly.

  5. Form the dough into round, scant 1-inch balls in a consistent size, using a tiny scoop, small kitchen teaspoon, or a measuring teaspoon. Drop rounded teaspoonfuls onto ungreased cookie sheets, 2 inches apart. Use the heel of your hand to lightly flatten each cookie.

  6. Bake cookies for 11-12 minutes, one baking sheet at a time, until cookies are set and edges begin to brown.

  7. Remove cookie sheets from the oven. Allow cookies to sit for 3-4 minutes before using a spatula to transfer them to a wire rack. Cool completely.

  8. Store cookies in an airtight container.

A Special Baking Tip from The Elf

The oatmeal chocolate chip cookie mix already contains chocolate chips. But the extra chips and the dried cherries added to the dough are what make Fran’s Cherry Chocolate Chip Cookies have such a distinctive flavor and texture. Don’t be put off by the dough’s stiff consistency as you add these additional ingredients.
