Fran's Cherry Chocolate Chip Cookies: Cake Mix Cookie Recipe
Fran’s Cherry Chocolate Chip Cookies, a variation of oatmeal
chocolate chip cookies, are easy to make. Although they taste like they are
made from scratch, the foundation of the recipe starts with a simple mix (true,
a cookie mix rather than a cake mix), one readily available in grocery stores.

Bake time: 11-12 minutes
Makes about 2 ½ dozen cookies
1 pouch (17 ounces) oatmeal chocolate chip cookie mix
½ cup (1 stick) butter or margarine, softened
1 cup semi-sweet chocolate chips
1 cup (5 ounces) dried cherries
- Preheat oven to 375º F.
- Chop dried cherries coarsely. (The cleaver will get sticky.)
- Place cookie mix, butter, and egg in a medium mixing bowl. Using
an electric mixer on low speed, beat ingredients together until combined. Dough
will be stiff.
- Add chocolate chips and chopped cherries to the dough. Use a
wooden spoon to combine the ingredients by hand, scraping the bowl regularly.
- Form the dough into round, scant 1-inch balls in a
consistent size, using a tiny scoop, small kitchen teaspoon, or a measuring
teaspoon. Drop rounded teaspoonfuls onto ungreased cookie sheets, 2 inches
apart. Use the heel of your hand to lightly flatten each cookie.
- Bake cookies for 11-12 minutes, one baking sheet at a time,
until cookies are set and edges begin to brown.
- Remove cookie sheets from the oven. Allow cookies to sit for
3-4 minutes before using a spatula to transfer them to a wire rack. Cool
- Store cookies in an airtight container.
