Hot Chocolate Cookie Recipe: Better Than Cocoa!

Love hot cocoa? This Hot Chocolate Cookie recipe lets you have your hot chocolate and eat it too.

These amazing drop cookies have just enough chocolate in the dough to classify them as a chocolate cookie.

But it’s the chocolate chips and miniature marshmallows – melted and browned on the top, just like they’d be if warmed under an oven broiler or over a campfire – that mimic a mug of hot cocoa. 

The marshmallows melt and ooze, adding a hint of caramel flavor, too. Pair them up with a glass of milk or a cup of hot chocolate and you'll feel cozy and warm even when it's cold outside.

Hot Chocolate Cookies from The Cookie Elf

Prep time: 10-15 minutes

Bake time: 9-11 minutes

Makes about 4-5 dozen cookies

Ingredients

1 ¼ cups (2 ½ sticks) butter or margarine, softened

1 cup granulated sugar

2/3 cup firmly packed brown sugar

2 eggs

1 teaspoon vanilla extract

3 ¼ cups all-purpose flour

5 packets (3/4 cup) hot chocolate mix (with sugar)

2 teaspoons baking powder

1 cup semi-sweet chocolate chips

1 cup miniature marshmallows

Directions for this Hot Chocolate Cookie Recipe

  1. Preheat oven to 350º F. Line baking sheets with parchment paper or silicone mats.
  2. In a medium bowl, combine flour, hot chocolate mix, and baking powder. Set aside.
  3. In a separate bowl, with an electric mixer on low speed, cream together butter, granulated sugar, and brown sugar beating until smooth, about 2 minutes. Add eggs and vanilla, beating until mixture is creamy.
  4. Gradually add flour mixture to sugar mixture, a little at a time, until mixture is smooth and dry ingredients are absorbed. Use a large spoon to stir chocolate chips and marshmallows into cookie dough. Dough will be thick.
  5. Drop dough in rounded teaspoonfuls onto prepared baking sheets, about 2 inches apart. Bake for 9-11 minutes until cookies are just set or light golden. Remove cookie sheets from the oven.
  6. Allow cookies to sit for 5 minutes before using a spatula to transfer them to a wire rack. Cool completely.
  7. Store cookies in an airtight container.

Special Baking Tips for the Hot Chocolate Cookie Recipe 

If you like the flavor of chocolate and mint together, substitute 1 teaspoon mint flavoring for 1 teaspoon of vanilla extract.

As you drop cookie dough onto trays, try to allow marshmallows to set on the tops of cookies. The sugar in the marshmallows crystalizes and melts when brought into contact with the baking sheet surface. But when marshmallows are on the tops of the cookies, they hold their shape and turn to a golden brown.
