White and Dark Chocolate Chip Blondies: a Brownie Recipe

White and Dark Chocolate Chip Blondies combine the classic goodness of chocolate chip cookies in an easy bar cookie recipe. Blondies are like brownies – a rich bar cookie – but with the cocoa in brownies replaced with brown sugar producing a butterscotch flavor. This variation, with nuts and two kinds of chocolate chips, is perfect for snacking and for lunch boxes.

White and Dak Chocolate Chip Blondies

Prep time: 10 minutes

Bake time: 30-35 minutes

Makes 24-36 bars

Ingredients

1 cup (2 sticks) butter or margarine, softened

2 cups packed light brown sugar

2 eggs

1 teaspoon vanilla extract

2 ½ cups all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

¾ cup white chocolate chips

¾ cup dark or semi-sweet chocolate chips

½ cup chopped walnuts

Directions

  1. Preheat oven to 350º F (325º F for a glass dish). Lightly grease a 13 x 9 baking pan.

  2. In a medium bowl, combine flour, baking soda, and salt. Set aside.

  3. In a separate bowl using an electric mixer on medium speed, cream together butter, brown sugar, and vanilla extract. Add eggs one at a time, beating until mixture light, and fluffy.

  4. Beat in dry ingredients gradually until dough is well blended.

  5. Stir in white chocolate chips, dark chocolate chips, and nuts. The dough will be thick.

  6. Spread mixture onto bottom of the prepared baking pan.

  7. Bake for 30-35 minutes or until golden brown. Remove the pan from the oven and allow cookies to cool completely on a wire rack. Cut into bars.

  8. Store bars loosely covered at room temperature.

Like other brownies and blondies, White and Dark Chocolate Chip Blondies are almost like a cake, yet have a dense texture that allows the individually-cut bars to be eaten as finger food. The dough is thick and rich. Be sure to press the cookie dough evenly into the pan to ensure uniform baking.
