Lemon Cake Mix Cookies: Easy Cookie Recipe and No Measuring!
Lemon Cake Mix Cookies, also known as Lemon Cool Whip Cookies, Lemon Crinkle Cookies, or
3-Ingredient Cookies, have (surprise) just three ingredients.There's no measuring!
The cookies are rolled in powdered sugar for a touch of added sweetness. Surfaces crinkle when baked. The lemon flavor is a refreshing taste when added to a holiday cookie platter or as a dessert in the spring and summer.
Prep time: 20-30 minutes
Bake time: 9-12 minutes
Makes about 3 dozen cookies
Ingredients
1 box (16 ounces) lemon cake mix
1 egg
8 ounces non-dairy whipped topping
Powdered sugar
Directions
- Preheat oven to 375º F.
- Place cake mix, egg, and whipped topping in a medium mixing
bowl. Use a large spoon or a rubber spatula to gently combine the ingredients by hand, scraping the bowl
regularly. Mix until dough is well blended and the cake mix has been absorbed.
- Place the powdered sugar in a shallow dish or on a plate.
- Form the dough into round, scant 1-inch balls in a
consistent size, using a tiny scoop, small kitchen teaspoon, or a measuring
teaspoon. Roll each ball in powdered sugar. Place cookies on ungreased baking
sheets 2 inches apart.
- Bake cookies for 9-12 minutes, one baking sheet at a time,
until cookies are set. Cookie surfaces will appear crinkled. Do not over bake.
- Remove cookie sheets from the oven. Allow cookies to sit for
1 minute before using a spatula to transfer them to a wire rack. Cool
completely.
- Store cookies in an airtight container using waxed paper or parchment paper to separate layers.
A Special Baking Tip from The Elf
Be sure to use original whipped topping, rather than light, reduced fat, low fat, or no-fat varieties, or these Lemon Cake Mix Cookies may not set. The dough may be sticky but will mold easily into balls when you roll them in the powdered sugar. As they bake, the Lemon Cake Mix Cookies will spread on the baking sheet to small rounds and the surfaces will crumple.
